Dill Cucumber Agua Fresca
Blended cucumber, lime and dill. Cool water for a hot day.
Dill Cucumber Agua Fresca is a zero-proof pitcher drink of fresh cucumber, lime, sugar and dill blended with cold water, strained, and seasoned with a splash of dill pickle brine. It is light, grassy and barely sweet, closer to flavored water than juice. Make a pitcher for four and keep it in the fridge.

Amounts for 4, in ounces.
- 1 large cucumber (about 12 oz, roughly chopped)
- 3 cups cold water
- 2 oz fresh lime juice (about 3 limes)
- ¼ cup sugar
- 3 sprigs fresh dill
- 3 oz dill pickle brine (chilled, from the jar)
- 4 slices cucumber (for garnish)
- 4 slices lime (cut into wheels, for garnish)
- Glass
- Collins glass
- Garnish
- cucumber wheel, dill sprig and lime wheel
How to make it
- Add the cucumber, 1 cup of the water, the lime juice, sugar and dill to a blender.
- Blend until completely smooth, about 45 seconds.
- Strain through a fine sieve into a pitcher, pressing on the pulp.
- Stir in the rest of the water and the pickle brine.
- Refrigerate for at least 30 minutes.
- Stir, then pour over ice in tall glasses.
- Garnish with cucumber slices, dill sprigs and lime wheels.
Bar tips
- Peel the cucumber if the skin is thick and waxy. Thin-skinned English or Persian cucumbers can go in whole.
- It keeps a day in the fridge. Stir before pouring, because it separates.
Make it your own
- Swap half the cucumber for honeydew melon for a sweeter, fruitier agua fresca.
- Blend in a few mint leaves with the dill.
Zero proof, full brine. No spirits, wine or beer in this one. If you need 0.0%, check the labels on any non-alcoholic bottles you use.
