BAR TALK

Brine Bar FAQ

What is a pickleback?
A pickleback is a shot of whiskey followed right away by a shot of pickle brine as a chaser. “Back” is bar slang for a chaser, as in a beer back or a water back. Our Classic Pickleback (No. 45) chases Irish whiskey with chilled dill brine; the Spicy Pickleback (No. 46) uses brine from a jar of hot dills.
Which pickle brine should I use?
Dill pickle brine, strained of seeds and garlic bits. Fermented pickles get their sour from lactic acid bacteria, while most shelf-stable jars get theirs from vinegar. Brine from refrigerated deli-style dills usually tastes fresher and more garlicky; shelf-stable brine is sharper. Skip sweet bread-and-butter brine unless a recipe asks for it, like the Sweet & Sour Pickle Shot.
Can I make pickle drinks without alcohol?
Yes. Ten drinks are zero-proof from the start: the four in Briny Without Booze (Pickle Lemonade, Pickle Ginger Fizz, Spicy Pickle Spritz and Pickle Virgin Mary) and six from Off the Menu (Pickle Slushie, Dill Cucumber Agua Fresca, Pickle Tonic, Strawberry Pickle Shrub, Pickle Porch Tea and Watermelon Pickle Smash). A few others list a zero-proof swap, like a nonalcoholic lager in the Classic Pickle Beer. Tap the Zero-proof filter to see them all.
What is a Dill Flight?
Four drinks from the menu poured as small tasting pours and served together, like a beer flight. Pour one of our house flights or build your own, then copy the shopping list or print the flight card. A flight is for sharing or tasting, not four full drinks.
What do the brine, heat and strength meters mean?
Brine runs from 1 (a hint of pickle) to 5 (straight from the jar). Heat runs from 0 (none) to 5 (hot). Strength is how boozy a drink tastes, not a measure of the pour: low drinks are mostly beer, medium ones stretch the spirit with a mixer (a mule or Bloody Mary still has 1½ to 2 oz), and high ones are spirit-forward, served up, on the rocks or as a shot. Zero means no spirits, wine or beer.
When is National Pickle Day?
National Pickle Day (US) is November 14 every year. A Dill Flight is a fine way to mark it, with or without the booze.

Sip, don't slam. Boozy drinks are for adults of legal drinking age. Drink responsibly; the zero-proof drinks are just as briny.
