Pickle Slushie
Brain freeze, but briny. The drive-in classic, made at home.
The Pickle Slushie is a zero-proof frozen drink made by blending dill pickle brine, simple syrup, lime juice and water with a lot of ice until it is spoonable. It tastes sweet, sharp and very pickley, like the green slushes drive-ins sell in summer. Brine-heavy and booze-free, it is the most pickle-forward drink in this section.

Ingredients
Amounts for 1, in ounces.
- 2 oz dill pickle brine (chilled, from the jar)
- 1½ oz simple syrup (equal parts sugar and water)
- ½ oz fresh lime juice
- 2 oz cold water
- 1½ cups ice
- 1 dill pickle spear (for garnish)
- Glass
- mason jar
- Garnish
- pickle spear and straw
How to make it
- Add the pickle brine, simple syrup, lime juice and water to a blender.
- Add the ice.
- Blend on high until smooth and slushy, about 30 seconds.
- Spoon into a jar or tall glass.
- Garnish with a pickle spear and add a wide straw.
Bar tips
- Freeze some brine in an ice-cube tray and use it for half the ice. The slushie stays briny to the last sip instead of watering down.
- Want it neon green like the drive-in kind? A drop of green food coloring does it. The brine alone makes it pale gold.
Make it your own
- Add 1.5 oz vodka to the blender for a grown-up slushie.
- Use lemonade instead of the syrup, lime and water for a quicker, sweeter version.
Bar lore
Sonic Drive-In put a pickle juice slush on its summer menu in 2018, and the green, salty-sweet drink became a social media talking point.
