Pickle Ginger Fizz

Ginger bite, lime zip and a briny fizz on top.

The Pickle Ginger Fizz is lime juice, ginger syrup and dill pickle brine shaken together, then topped with club soda in a tall glass. Fresh ginger brings gentle warmth, lime keeps it bright and the brine adds a salty edge under the bubbles. It is drier and zippier than the Pickle Lemonade, like a briny ginger ale made from scratch.

How to make it

  1. Add the lime juice, ginger syrup and pickle brine to a shaker with ice.
  2. Shake hard for about 10 seconds.
  3. Strain into a highball glass filled with fresh ice.
  4. Top with the club soda.
  5. Give it one gentle stir.
  6. Garnish with candied ginger, the lime wheel and the pickle chip.

Bar tips

  • Ginger syrup: simmer ½ cup thinly sliced fresh ginger with ½ cup sugar and ½ cup water for 15 minutes, let it cool, then strain. It keeps about two weeks in the fridge.
  • Pour the soda down the inside of the glass and stir only once. Every extra stir knocks out bubbles.
  • For more ginger heat, leave the sliced ginger steeping in the cooled syrup overnight before you strain it.

Make it your own

  • No ginger syrup? Skip it and the club soda: pour the lime and brine straight over ice and top with 5 oz of ginger beer.
  • Use lemon instead of lime for a softer, rounder fizz.
