Strawberry Pickle Shrub
Strawberries, sugar and brine, steeped into a sweet-tart soda.
The Strawberry Pickle Shrub is a zero-proof soda built on a quick shrub, strawberries macerated in sugar, then sharpened with dill pickle brine and lemon instead of plain vinegar. Two ounces of shrub topped with soda tastes like strawberry lemonade with a salty, tangy twist. One batch of shrub makes four drinks.

Amounts for 4, in ounces.
- 1 cup strawberries (hulled and sliced)
- ½ cup sugar
- 4 oz dill pickle brine (strained, from the jar)
- 1 oz fresh lemon juice
- 20 oz club soda (chilled, about 5 oz per glass)
- fresh basil (for garnish) optional
- dill pickle chips (for garnish)
- Glass
- Collins glass
- Garnish
- basil, pickle chip and straw
How to make it
- Toss the strawberries with the sugar in a bowl.
- Leave them for at least 1 hour, stirring once or twice, until they sit in a puddle of syrup.
- Mash the berries lightly and stir in the pickle brine and lemon juice.
- Strain through a fine sieve, pressing on the fruit, to get about 1¼ cups of shrub.
- Fill four collins glasses with ice and pour 2 oz of shrub into each.
- Top each with about 5 oz of club soda and stir once.
- Garnish with basil leaves and a pickle chip, and add a straw.
Bar tips
- The shrub keeps a week in a jar in the fridge. Shake it before pouring.
- For a deeper, jammy shrub, macerate the berries in the fridge overnight instead of one hour.
Make it your own
- Use raspberries or ripe peaches instead of strawberries.
- Top with ginger beer instead of club soda for a spicier, sweeter soda.
Zero proof, full brine. No spirits, wine or beer in this one. If you need 0.0%, check the labels on any non-alcoholic bottles you use.
