No. 42Tequila & Mezcal
Pickle Pineapple Margarita
Sweet pineapple, salty brine, a little chili kick.
A Pickle Pineapple Margarita mixes tequila, pineapple juice, lime and dill pickle brine into a sweet-and-salty margarita. The pineapple softens the brine's bite, and a chili-lime rim adds a gentle kick. Shaken hard and served up, it pours with a light, frothy pineapple head.

How to make it
- Chill a margarita glass in the freezer or with ice water.
- Run the lime wedge around the rim of the chilled glass and dip it in chili-lime seasoning.
- Add the tequila, pineapple juice, lime juice, orange liqueur and brine to a shaker with ice.
- Shake hard for 15 seconds to build a frothy head.
- Strain into the rimmed glass, no ice.
- Garnish with a pineapple wedge and a pickle chip.
Bar tips
- Use 100% pineapple juice, fresh or canned; a sweetened pineapple drink blend makes it cloying.
- The long, hard shake is what whips the pineapple juice into a silky foam cap, so don't cut it short.
- If your brine is very sour, add 0.25 oz agave syrup to keep the sweet-salty balance.
Make it your own
- Use bread-and-butter pickle brine for a sweeter, tangier drink.
- Swap the tequila for mezcal for a smoky pineapple version.
Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
