Pickle Gin & Tonic
A big-glass G&T with cucumber, lime and a briny backbone.
The Pickle Gin & Tonic is a gin and tonic served Spanish-style in a big wine glass, with half an ounce of dill pickle brine, a cucumber ribbon and a lime wedge. The brine softens the tonic’s bitterness and brings out the gin’s herbs. It is crisp, bitter-edged and very easy to drink.

Amounts for 1, in ounces.
- 2 oz gin (a London dry)
- ½ oz dill pickle brine (chilled, from the jar)
- 4 oz tonic water (chilled)
- 1 cucumber ribbon (peeled lengthwise, for garnish)
- 1 lime wedge
- Glass
- wine glass
- Garnish
- cucumber ribbon and lime wedge
How to make it
- Fill a large wine glass with ice.
- Curl the cucumber ribbon around the inside of the glass.
- Pour in the gin and pickle brine.
- Pour the tonic slowly down the side of the glass.
- Squeeze the lime wedge over the top and drop it in.
- Give it one gentle stir.
Bar tips
- Use a good, not-too-sweet tonic. Sweeter tonics plus brine taste like salted soda.
- A big glass packed with ice melts slower than a small one, so the last sip is as sharp as the first.
Make it your own
- Use a cucumber-forward gin, such as Hendrick’s, to double down on the green.
- Add a sprig of fresh dill alongside the cucumber ribbon.
Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
