Pickle Mojito
Mint, lime and rum over crushed ice. The brine keeps it cool.
The Pickle Mojito is a Cuban-style mojito, fresh mint, lime, sugar and white rum over crushed ice, with half an ounce of dill pickle brine and a splash of soda. Mint and dill are both cooling herbs, so the brine tastes at home here. It is tall, fresh and minty, with a gentle salty finish.

Units
Amounts for 1, in ounces.
- 8 fresh mint leaves
- ¾ oz simple syrup (equal parts sugar and water)
- ¾ oz fresh lime juice (about 1 lime)
- 2 oz white rum
- ½ oz dill pickle brine (chilled, from the jar)
- 2 oz club soda (chilled)
- 1 sprig fresh mint (for garnish)
- 1 slice lime (cut into a wheel, for garnish)
- Glass
- Collins glass
- Garnish
- mint sprig, lime wheel and straw
How to make it
- Put the mint leaves and simple syrup in a collins glass.
- Press the mint gently with a muddler, just enough to bruise it.
- Add the lime juice, rum and pickle brine.
- Fill the glass with crushed ice and stir from the bottom to lift the mint.
- Top with the club soda and a little more crushed ice.
- Garnish with the mint sprig and lime wheel, and add a straw.
Bar tips
- Bruise the mint, don’t shred it. Torn leaves turn grassy and bitter.
- Slap the garnish sprig against your hand before you tuck it in. It wakes up the smell right under your nose.
Make it your own
- Muddle three cucumber slices with the mint for a greener, garden-fresh mojito.
- Skip the rum and add 2 oz more soda for a zero-proof mojito.
Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
