Pickle Spritz

The 3-2-1 spritz with a splash of the jar and an olive.

The Pickle Spritz is a classic bitter orange aperitif spritz, prosecco, Aperol-style aperitif and soda, with half an ounce of dill pickle brine built in over ice. The brine takes the edge off the sweetness and makes the bitter orange taste brighter. It is the boozy, non-spicy cousin of the zero-proof Spicy Pickle Spritz.

orange peel, olive and pickle chip

How to make it

  1. Fill a large wine glass with ice.
  2. Pour in the aperitif and pickle brine.
  3. Add the prosecco, then the club soda.
  4. Give it one gentle stir.
  5. Garnish with the orange peel, an olive and a pickle chip.

Bar tips

  • Remember it as 3-2-1: three parts prosecco, two parts aperitif, one part soda. It scales to a pitcher just as easily.
  • Venetian bars often garnish a spritz with a green olive. Here it earns its place next to the brine.

Make it your own

  • Use Campari instead of Aperol for a drier, more bitter spritz.
  • Swap prosecco for a dry white wine and add another ounce of soda for a lighter wine spritz.

Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
