Pickle Rum Punch

One of sour, two of sweet, three of strong, a splash of brine.

Pickle Rum Punch is a big-batch rum punch for eight, aged rum, lime, sugar, pineapple juice and water, with half a cup of dill pickle brine and a few dashes of bitters, chilled and poured over ice. It drinks fruity and easy, and the brine keeps it from tasting like juice. Mix it an hour before the guests arrive.

How to make it

  1. Pour the rum, lime juice, simple syrup, pineapple juice, pickle brine and water into a large pitcher or punch bowl.
  2. Add the bitters and stir well.
  3. Cover and refrigerate for at least 1 hour.
  4. Fill rocks glasses with ice and pour in about 6 oz each.
  5. Dust each glass with a little nutmeg, if you like.
  6. Garnish with a lime wheel and a pickle chip.

Bar tips

  • The water stands in for melting ice. If you serve from a bowl with a big block of ice in it, cut the water in half.
  • Squeeze the limes no more than a few hours ahead. Lime juice tastes dull by the next day.
  • Taste once it is cold, since chilling dulls sweetness. Add syrup an ounce at a time if it needs it.

Make it your own

  • Use half aged rum and half dark Jamaican rum for a funkier, deeper punch.
  • Swap the water for club soda, added just before serving, for a sparkling punch.

Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
