Pickle Sangria
A green pitcher for the porch: white wine, cucumber and brine.
Pickle Sangria is a white wine sangria made by the pitcher with brandy, orange liqueur, dill pickle brine, cucumber, lemon and lime, chilled for two hours and topped with soda in the glass. It tastes crisp and citrusy first, then softly salty and green. Think of it as a garden-party sangria that went to the deli.

Ingredients
Batch size
Units
Amounts for 6, in ounces.
- 3 cups dry white wine (one 750 ml bottle, such as Sauvignon Blanc)
- 3 oz brandy
- 2 oz orange liqueur (triple sec or Cointreau)
- 4 oz dill pickle brine (chilled, from the jar)
- 2 oz simple syrup (equal parts sugar and water)
- ½ cucumber (thinly sliced)
- 1 lemon (thinly sliced)
- 1 lime (thinly sliced)
- 2 sprigs fresh dill
- 1½ cups club soda (chilled, to top)
- dill pickle chips (for garnish)
- Glass
- wine glass
- Garnish
- cucumber wheel, lemon wheel and pickle chip
How to make it
- Pour the wine, brandy, orange liqueur, pickle brine and simple syrup into a large pitcher.
- Stir until the syrup is mixed in.
- Add the cucumber, lemon and lime slices and the dill.
- Cover and refrigerate for at least 2 hours.
- Fill wine glasses with ice and pour in about 6 oz each, spooning some fruit into every glass.
- Top each glass with about 2 oz of club soda.
- Garnish with a pickle chip.
Bar tips
- Drink it within 8 hours of mixing. After that the lemon pith and cucumber skin start to turn the pitcher bitter.
- Pick a crisp, unoaked white. Buttery, oaky wines clash with the brine.
- Add the soda glass by glass rather than to the pitcher, so the last pour is as fizzy as the first.
Make it your own
- Use a dry rosé instead of white wine for a pink, berry-leaning pitcher.
- Top with prosecco instead of club soda to make it a party.
Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
