Extra Spicy Pickle Michelada
The michelada after it found the jalapeño jar. Big heat, big brine.
The Extra Spicy Pickle Michelada is the Pickle Michelada turned way up: pickled jalapeño brine, habanero hot sauce and muddled fresh jalapeño join the lime, Worcestershire and dill brine. It is still tomato-free, but the heat is real and it lingers. Order it when the regular michelada feels too polite.

Units
Amounts for 1, in ounces.
- 12 oz Mexican lager (ice cold)
- 1 oz fresh lime juice (about 1 lime)
- ¾ oz dill pickle brine (chilled)
- ½ oz pickled jalapeño brine (from a jar of pickled jalapeños)
- 5 slices jalapeño (seeds in, 1 saved for garnish)
- 4 dashes habanero hot sauce
- 3 dashes Worcestershire sauce
- 2 dashes Maggi seasoning (or soy sauce)
- 1 tbsp chili-lime seasoning (for the rim)
- 1 lime wedge (for the rim)
- 1 slice lime (a wheel, for garnish)
- 1 dill pickle spear (for garnish)
- Glass
- beer mug
- Rim
- chili-lime
- Garnish
- jalapeño, lime wheel and pickle spear
How to make it
- Wet the rim of a beer mug with the lime wedge.
- Dip the rim in chili-lime seasoning.
- Muddle 4 jalapeño slices with the lime juice in the bottom of the mug.
- Add both brines, the habanero sauce, Worcestershire and Maggi.
- Fill the mug with ice.
- Pour in about half the lager and stir once, gently.
- Garnish with a jalapeño slice, a lime wheel and a pickle spear, then top up with lager as you drink.
Bar tips
- Muddle gently: you want jalapeño oil, not jalapeño confetti.
- Keep a glass of milk or some tortilla chips nearby; dairy and starch cool chile heat better than more beer.
- Taste after the first pour and add hot sauce one dash at a time.
Make it your own
- For smoky heat, swap the habanero sauce for a chipotle hot sauce.
Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
