No. 32Vodka & Gin Pickle Cocktails

Pickle Cucumber Cooler

Long, cool and quietly briny.

The Pickle Cucumber Cooler is a tall, lightly sweet gin highball: muddled cucumber, lime, simple syrup and dill pickle brine shaken with gin and topped with soda water. It is the gentlest tall drink in the section, lighter on gin than the Pickle Collins, with lime instead of lemon, cool cucumber and none of the Cucumber Dill Mule's ginger bite.

How to make it

  1. Muddle the cucumber slices in a shaker.
  2. Add the gin, lime juice, simple syrup and pickle brine.
  3. Fill the shaker with ice and shake for 10 seconds.
  4. Double-strain into an ice-filled collins glass.
  5. Top with the soda water and stir once.
  6. Garnish with a cucumber wheel and a pickle chip.

Bar tips

  • Muddle the cucumber well; its juice carries most of the flavor.
  • For a crowd, multiply everything but the soda, chill it in a pitcher, and top each glass with soda to order.

Make it your own

  • Use vodka for a cleaner, less botanical cooler.
  • Add ¼ oz elderflower liqueur for a floral note.

Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
