Garlic Dill Beer
Garlic-steeped brine, dill-salt rim. Vampires need not apply.
Garlic Dill Beer is a crisp pilsner mixed with dill pickle brine that has been steeped with a smashed garlic clove, served in a glass rimmed with garlicky dill salt. It is the most savory of the pickle beers, with a big garlic aroma and fresh dill in every sip. Think of it as the pickle beer built for pizza night.

How to make it
- Steep the smashed garlic clove in the pickle brine for 10 minutes.
- Mix the salt, dried dill and garlic powder on a small plate.
- Wet the outside rim of a 16-oz pilsner glass with the lemon wedge.
- Dip the rim in the dill salt.
- Strain the garlic brine into the glass.
- Tilt the glass and slowly pour in the pilsner.
- Garnish with a pickle spear and a dill sprig.
Bar tips
- Smash the garlic instead of mincing it: you get clean garlic aroma without bits floating in your beer.
- Wet only the outside of the rim so the salt stays on the glass and out of the beer.
- Steep a whole jar's worth of brine with a few cloves and keep it in the fridge; it gets better overnight.
Make it your own
- Short on time? Use brine from a jar of garlic dills and skip the steeping.
Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
