Pickle Beer Bloody
Tomato, horseradish, brine and beer. Brunch just got briny.
A Pickle Beer Bloody is a red beer, the Midwest bar mix of tomato juice and lager, built like a Bloody Mary with dill pickle brine, horseradish, Worcestershire and celery salt. It is lighter and fizzier than a Bloody Mary and has no liquor. Serve it at brunch with a loaded pickle-and-celery garnish.

- pickle spear, celery stalk and olive
How to make it
- Wet the rim of a pint glass with the lemon wedge.
- Dip the rim in celery salt.
- Fill the glass with ice.
- Add the tomato juice, brine, lemon juice, horseradish, Worcestershire, hot sauce and pepper.
- Stir to combine.
- Top with the lager and stir once, gently.
- Garnish with a pickle spear, a celery stalk and an olive.
Bar tips
- Stir the tomato mix before the beer goes in; one gentle stir afterward keeps the fizz.
- Batch the tomato base for a crowd and keep it in the fridge for up to two days, then add beer to order.
Make it your own
- Swap the tomato juice for clam-tomato juice for a brinier, more savory base.
- Add 1.5 oz of vodka for a full-strength Bloody Mary with a beer top.
Drink responsibly. This one is for adults of legal drinking age. Want it without the booze? The zero-proof drinks are just as briny.
